32 oz Frozen Corn

1 Cup Mayo

Red Bell Pepper

Jalapeno Pepper
Seeded and Diced

1 Clove Garlic
Minced

8 oz Montery Jack Cheese
Shredded

1 Tbsp Smoked Paprika

Salt

Pepper

2 Tbsp Butter
Directions
- Sautee 1 Tbsp butter & corn on med-high until corn is golden brown and popping. Don't worry if you burn it slightly.
- Remove corn to large mixing bowl Add salt & pepper
- Add 1 Tbsp butter and cook remaining veggies scrapping any brown parts of corn stuck to the bottom of the pan until veggies are soft
- Combine all ingredients in bowl with mayo & cheese and then transfer to casserole dish
- Lightly sprinkle paprika over top to taste or for something spicier you could use cayenne pepper.
- Bake on 350 degrees for 10-12 minutes or until everything is bubbling
