Corn Dip

Ingredients

  • 32 oz Frozen Corn
  • 1 Cup Mayo
  • Red Bell Pepper Diced
  • Onion Diced
  • Jalapeno Pepper Seeded and Diced
  • 1 Clove Garlic Minced
  • 8 oz Montery Jack Cheese Shredded
  • 1 Tbsp Smoked Paprika
  • Salt
  • Pepper
  • 2 Tbsp Butter

Directions

  1. Sautee 1 Tbsp butter & corn on med-high until corn is golden brown and popping. Don't worry if you burn it slightly.
  2. Remove corn to large mixing bowl Add salt & pepper
  3. Add 1 Tbsp butter and cook remaining veggies scrapping any brown parts of corn stuck to the bottom of the pan until veggies are soft
  4. Combine all ingredients in bowl with mayo & cheese and then transfer to casserole dish
  5. Lightly sprinkle paprika over top to taste or for something spicier you could use cayenne pepper.
  6. Bake on 350 degrees for 10-12 minutes or until everything is bubbling
