Black Bean Salsa

Ingredients

  • 1 can Black Beans
  • 1 cup Corn Grilled or charred works best
  • 1 Tomato or a few small romas
  • 1 half Red Onion diced
  • 1 Jalapeno Pepper Seeded and Diced
  • 1 cup Cilantro chopped
  • 1 Lime

Directions

  1. Drain and rinse black beans. Combine with corn in a large bowl.
  2. Seed and dice tomato and jalapenos. Add to bowl along with diced red onion.
  3. Add chopped cilantro and the juice of 1 lime to bowl. Stir to combine.
  4. Refrigerate the mixture for a few hours or overnight for best results.
